They are good to eat and their eggs are used to make caviar. As a result, there are strict size and take limits in most of the places they live. White Sturgeon are easily threatened by overfishing. Mostly they sit near the bottom and wait for food to drift by. They also sometimes free-jump, for reasons I do not know. They have barbels similar to catfish and can sense food sources both in the water and beneath the mud.Īlthough they don't look like they would, White Sturgeon often jump when hooked. They have an excellent sense of smell and primarily feed on dead fish and other things that float by. They live in rivers and bays in both fresh and salt water along the northwest coast of North America. They are technically classified as a bony fish but actually have more cartilage than bone and hence resemble sharks. The largest freshwater fish in North America, White Sturgeon are an ancient, bottom-dwelling fish that can live over 100 years and can reach lengths of over 20 feet.
